Japanese fried chicken Tatsuta-age

This fried chicken is called “Tatsuta-age(竜田揚げ)” in Japanese. It is one of most popular dish in Japan. This is a simple and delicious way to cook chicken. It tastes light and crispy. It is good even as cold, my mother used to make this for my lunch box when I was child.

I usually keep and reuse the used oil. After several times of deep fried cooking, I put old oil into the empty milk pack and seal it. Then take to the garbage (sekajäte). Don’t pour oil into the drainage! It is really bad for environment.

Japanese fried chicken Tatsuta-age recipe (4 servings)

Ingredients:

400g chicken breast fillet
salt and pepper

Marinade sauce:
1 onion, grated
2 tbsp soy sauce
2 tbsp sake
1 tsp sesame oil
2 tsp ginger, grated

1.5 dl flour
1.5 dl potato starch
5 dl vegetable oil for frying

1. Cut the chicken into bite-size pieces and season with salt and pepper.
2. Grate ginger and onion with grater into the bowl. You can use cheese grater (raastin).
Add marinade sauce ingredients to the bowl and mix.
3. Marinate chicken for about 30 minutes.
4. Heat the vegetable oil in deep frying-pan to 170C. Drain the chicken, pat dry, and coat with the mixture of potato starch and flour.
5. Fry the chicken a few pieces at a time for 4 to 5 minutes, turning over several times until cooked through and golden brown.
6. Drain in a single layer on paper towels. Serve with lemon or lime.
