Boiled spinach Japanese style Ohitashi

I was waiting for my spinach to grow in my balcony. It is already too big for fresh salad, but is perfect for this dish called “Ohitashi (おひたし)” in Japanese. Ohitashi is one of most basic Japanese side dish, and other boiled green vegetables are prepared in this way.

Boiled spinach Japanese style recipe (2 servings)

1 pack spinach or 20-30 big spinach leaves
1 tbsp salt

Dressing:
2 dl dashi stock
1 tsp soy sauce
1 tsp salt
1/2 tsp sugar

Few dried bonitos for garnish (optional)

1. To make dressing; boil the dashi stock with salt, soy sauce and sugar in the small pan. Let it cool.
2. Boil the spinach in the boiling water with 1 tablespoon salt for 1 minutes.
3. Drain spinach and cool down with cold water.
4. Squeeze out water with hand.
5. Soak spinach in the dressing for 10-15 minutes in refrigerator.
6. Serve cold, top with dried bonitos (if you like).
